Air fryer salmon and vegetables is the perfect seafood dinner. Moist, flaky fish fillets with a crisp outer crust along with mushrooms, broccoli, and asparagus make for a healthy and delicious meal. Totally doable on a busy weeknight!
I get it. On weekdays, you don’t have the time or energy to cook elaborate, from-scratch meals. At the same time, you want to eat fresh and healthy food, so take-out is also not always an option. Enter this easy air fried salmon and vegetables recipe. With a delicious olive oil-lemon dressing, it is my go-to when I am strapped for time in the middle of the week but still want a hot home cooked meal.
Here’s what you need to do: make the dressing (takes all of two minutes), brush the salmon and veggies with the dressing, and pop everything (yes, salmon and veggies together) into the air fryer for ten minutes. That’s literally it! You don’t even need to preheat the air fryer or flip the food halfway, yay!
And if you don’t want to go to the trouble of chopping up those veggies, do what I do. Buy bagged and prepped vegetables and be done with it. These days, every supermarket carries pre-chopped vegetables, so you literally don’t have to do anything. They are a tad more pricey, but if time saving is on your mind, this is the way to go.

1. Wash and pat dry the salmon. Make sure there’s no moisture as you want the sauce to stick to it.
2. In a bowl, add the olive oil, Dijon mustard, lemon, salt, and all the dry ground spices. Whisk to make the sauce.
3. Brush the salmon fillets generously with about three-fourth of the sauce, making sure to get the sides.
4. Toss the vegetables with the remaining sauce.
5. Spread the vegetables in the basket of your air fryer and arrange the salmon fillets over them. Air fry for 8-10 minutes at 390 Fahrenheit. Once done, take out the vegetables and fish in a platter and serve warm.
Top Tips
- If you want the vegetables slightly on the crunchier side, here’s a tip. Air fry the salmon alone for the first 5 minutes. Then arrange the vegetables all around the fish and finish air frying for the remaining time.
- Don’t have these particular veggies? Other possibilities are cauliflower, carrots, beans, and celery. Try any of these.
- Every air fryer behaves differently, so the cooking temperature and time is a guide only. Do check on the food to see if you need to cook it more or less.
- Do remember to chop off the tough ends of the asparagus if using it.
- I used the 6-quart Instant Pot Vortex air fryer, which is slightly larger than other models. However, if you have a smaller air fryer, you might want to cook the fish and vegetables in two batches.
