Air Fryer Salmon and Vegetables

Equipment

  • Air Fryer 6-quart Instant Pot Vortex

Ingredients

  • 2 salmon fillets cut into 4 pieces
  • 1 bunch asparagus ends cut off
  • 3 cups broccoli florets
  • 3 cups mushrooms sliced

Sauce Ingredients

  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • ½ tsp sea salt
  • ½ tsp black pepper freshly cracked
  • ½ tsp paprika
  • ½ tsp garlic powder

Instructions

  • Wash the salmon and pat it dry with paper towels
  • In a bowl, add the olive oil, Dijon mustard, lemon juice, salt, black pepper, paprika, and garlic powder. Whisk to make the sauce.
  • Brush the salmon fillets generously with about three-fourth of the sauce, making sure to get the sides.
  • Toss the vegetables with the remaining sauce. 
  • Spread the vegetables in the basket of your air fryer and arrange the salmon fillets over them. Air fry for 8-10 minutes at 390 Fahrenheit. Once done, take out the vegetables and fish in a platter and serve warm.

Notes

  1. There is no need to preheat the air fryer or flip the food halfway through cooking.
  2. If you want the vegetables slightly on the crunchier side, here’s a tip. Air fry the salmon alone for the first 5 minutes. Then arrange the vegetables all around the fish and finish air frying for the remaining time.
  3. You can also try cauliflower, carrots, beans, and celery in this recipe.
  4. To save time, consider using pre-chopped bagged vegetables.
