In a bowl, add the olive oil, Dijon mustard, lemon juice, salt, black pepper, paprika, and garlic powder. Whisk to make the sauce.
Brush the salmon fillets generously with about three-fourth of the sauce, making sure to get the sides.
Toss the vegetables with the remaining sauce.
Spread the vegetables in the basket of your air fryer and arrange the salmon fillets over them. Air fry for 8-10 minutes at 390 Fahrenheit. Once done, take out the vegetables and fish in a platter and serve warm.
Notes
There is no need to preheat the air fryer or flip the food halfway through cooking.
If you want the vegetables slightly on the crunchier side, here’s a tip. Air fry the salmon alone for the first 5 minutes. Then arrange the vegetables all around the fish and finish air frying for the remaining time.
